The holiday season is upon us and one of the favorite habits of Italians is to devote time to the preparation of traditional dishes, or even just spend more time at home with friends and family. According to research conducted by Toluna for Dyson – with the aim of investigating the habits and attitudes of Italians in the kitchen – there are on average 2 hours go to the stove during the week, but increase if you consider the weekend or holidays. In fact, we spend an average of 3 hours in the kitchen on Saturday or Sunday and even 7-8 hours during holidays such as Christmas.
What not everyone knows is that the kitchen air can be polluted, precisely because of cooking fumes or some ways of preparing food.the. According to the research mentioned above, the main concern in the kitchen is represented by odors, but also by the presence of bacteria, fungi and molds. Among the preferred cooking methods in Italy, the preparation of meat or fish on the grill or on the plate is in first place, followed by cooking in the oven and boiling; one in two Italians cannot give up frying.
But what really happens in the air of our kitchen? The emission of cooking pollutants depends on several factors. To give some examples, the emissions of fine particles vary depending on the cooking method and temperature, the type of stove, the pan or pot we choose to use, the cooking oil and the ventilation system used.
Frying, involving heating the ingredients in oil or fat at high temperatures, can release fine and ultrafine particles, and the oil used can emit high levels of polycyclic aromatic hydrocarbons. Or browning, such as grilling steaks or toasting bread, may seem like the time when food smells best, but that smell is caused by compounds released during cooking, such as particulates and volatile organic compounds. Speaking of food, there are some factors that can be linked to the emission of pollutants; for example, lean meat produces less particulates than other types of meat.
